The story in braised pork: Kuan Kee Duck Porridge and Kway Chap at Kimberley Street Night Market
The late-night delicious legend of Kimberley Street
When talking about the night market delicacies on Penang’s Kimberley Street (Lebuh Kimberley), the “Four Heavenly Kings” are legendary among food lovers: Emperor Chicken Feet, Kum Kee Duck Porridge & Kway Chap, Char Kway Teow, and Mixed Fruit Dessert Soup. These four dishes embody the late-night soul of the entire street — and among them, the most iconic is undoubtedly the fragrant, time-honored Kuan Kee Duck Porridge and Kway Chap。
From Chaoshan roots to the streets of Penang
Duck congee and kway sauce, a dish, originated from Chaoshan, China. The Chaoshan people who moved to Nanyang in their early years had a tight life, so they used cheap offal and rice milk to make kway juice as their staple food. The original version was "more ingredients and less kway", but now it has evolved into "too much ingredients to see kway", which is also the charm of Penang's street food culture-simple but rich.
A bowl of unforgettable braised pork
Quan Kee's duck congee and kway sauce are well-made. A bowl is full of pig intestines, pig scalp, pig ears, pig blood, braised eggs and duck meat. All ingredients are simmered over low heat in the old braised sauce for several hours, which melts in the mouth and is salty and delicious. That bowl of crystal clear kway chap is made of rice milk, which is flexible and smooth; every bite can taste braised pork, duck and rice at the same time. When the braised sauce is mixed with duck congee, the rich taste makes people try it to become a customer.
The new touch of the old taste
When night falls, the steam in front of the stall is filled with a faint smell of braised pork. This is one of the truest nights in Penang. Perhaps, the so-called "Four Heavenly Kings" are not just titles, but belong to the late-night taste memories of Penang people.
