When it comes to Penang's soul food, Bridge Street Prawn Noodles is always on the list. This bowl of noodle soup made over low heat with shrimp shells, shrimp heads and pork bones has a golden-red color and a tangy aroma. It is salty and sweet in the mouth. It is the ultimate expression of concentrated shrimp freshness. The flavor of a time-honored brand passed down for three generations
Bridge Street Prawn Noodles was founded in Wanshan, Shewei, by Mr. Liu Yijin in 1961, and has been passed down for three generations. The current boss, Liu Yongning, gets up at 4 a.m. every day to prepare the ingredients and starts cooking the soup at 5:30. The soup base alone needs to be carefully boiled for more than two hours. As the morning light rises, regular customers and tourists flock in one after another, just for the familiar taste.
This stall with a history of more than half a century is not only loved by locals, but also attracts many foreign tourists, including gourmets from China, Taiwan, Hong Kong, Japan and South Korea.

Penang’s Hokkien prawn noodles come in a variety of styles — some are prawn-forward, others meatier, some with a rich, hearty broth, and others light and sweet. As Liu Yongning puts it, “The best Hokkien prawn noodles is simply the bowl you love the most.”
The characteristic of Bridge Street Prawn Noodles lies in the use of fresh shrimp shells and pork bones to make a sweet soup base, with homemade chili sauce, spicy with sweetness, the soup is not greasy, and the layers are distinct.
